Ingredients

  • 0.75 cups All-purpose flour
  • 1 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 3 large Eggs
  • 0.75 cups Granulated sugar
  • 1 teaspoons Vanilla extract
  • 3 tablespoons Whole milk
  • 0.5 cups Powdered sugar
  • 0.5 cups Jelly or jam (any flavor)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 10x15-inch jelly roll pan and line it with parchment paper, allowing a slight overhang on the edges.

Step 2

In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, use an electric mixer to beat the eggs on high speed for 2 minutes, until thick and pale. Gradually add the granulated sugar while beating, then mix in the vanilla extract.

Step 4

Fold the dry ingredients into the egg mixture in three additions, alternating with the milk. Gently stir until just combined, taking care not to deflate the batter.

Step 5

Pour the batter into the prepared jelly roll pan and spread it evenly with a spatula. Tap the pan lightly on the counter to remove air bubbles.

Step 6

Bake for 10-12 minutes, or until the cake springs back when lightly touched and the edges are just beginning to pull away from the pan.

Step 7

While the cake is baking, prepare a clean kitchen towel by sprinkling it generously with powdered sugar. This will prevent the cake from sticking.

Step 8

As soon as the cake comes out of the oven, carefully invert it onto the prepared towel. Remove the parchment paper and gently roll the cake up in the towel, starting from the short side. Let it cool completely while rolled, about 30 minutes.

Step 9

Once the cake has cooled, carefully unroll it and spread an even layer of your favorite jelly or jam onto the surface, leaving a 1/2-inch border around the edges.

Step 10

Re-roll the cake (without the towel this time), wrap it tightly in plastic wrap, and refrigerate for at least 1 hour to set.

Step 11

Before serving, dust the top with powdered sugar and slice into 1-inch thick servings. Enjoy Grandma Chris's timeless jelly roll!
