Ingredients

  • 6 large ripe tomatoes
  • 1 medium English cucumber
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 small red onion
  • 2 cloves garlic
  • 0.25 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 0.5 cup cold water
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon sweet paprika
  • 2 slices stale bread
  • 4 optional ice cubes
  • 4 for garnish fresh basil leaves
  • 0.5 cup croutons

Directions

Step 1

Prepare the vegetables by washing them thoroughly. Core and roughly chop the tomatoes, peel and chop the cucumber, seed and chop the red and green bell peppers, and peel and chop the red onion.

Peel the garlic cloves and crush them slightly using the flat side of a knife.

In a blender or food processor, combine the tomatoes, cucumber, red and green bell peppers, red onion, garlic, stale bread slices (torn into pieces), olive oil, red wine vinegar, and cold water. Blend until smooth.
