Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 whole garlic cloves, minced
  • 2 medium carrots, finely chopped
  • 2 medium celery stalks, finely chopped
  • 1 pound ground beef or Italian sausage
  • 28 ounces crushed tomatoes (canned)
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 teaspoons sugar
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 cup water or beef stock
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onions and cook for 3–4 minutes until they become translucent.

Step 3

Stir in the minced garlic and cook for another 1–2 minutes, being careful not to burn it.

Step 4

Add the chopped carrots and celery. Sauté for 5–6 minutes until softened.

Step 5

Increase the heat slightly and add the ground beef or Italian sausage. Break it up with a wooden spoon and cook until browned, about 7–8 minutes. Drain any excess fat if necessary.

Step 6

Stir in the tomato paste and cook for 1 minute to deepen the flavor.

Step 7

Pour in the red wine, scraping the bottom of the pot to deglaze it. Let it simmer for 2–3 minutes to reduce slightly.

Step 8

Add the crushed tomatoes, water or beef stock, dried oregano, dried basil, sugar, bay leaf, salt, and pepper. Stir well to combine.

Step 9

Bring the sauce to a gentle boil, then reduce the heat to low. Cover partially with a lid and let it simmer for 60–75 minutes, stirring occasionally. Add more water or stock if the sauce becomes too thick.

Step 10

Taste and adjust the seasoning as needed. Remove the bay leaf before serving.

Step 11

Stir in the chopped parsley just before serving for a fresh burst of flavor.

Step 12

Serve hot over your favorite pasta and enjoy!
