Ingredients

  • 1 tbsp unsalted butter (for greasing)
  • 2 tbsp granulated sugar (for coating the ramekins)
  • 1 cup whole milk
  • 0.3333 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 4 large egg yolks
  • 3 tbsp Grand Marnier or other orange liqueur
  • 1 tsp orange zest (finely grated)
  • 5 large egg whites
  • 0.25 tsp cream of tartar
  • 1 tbsp powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Grease four 8-ounce ramekins with unsalted butter, ensuring the butter is evenly spread. Dust the inside of the ramekins with granulated sugar, tapping out the excess. Set aside.

Step 3

In a medium saucepan, heat the milk over medium heat until warm (but not boiling).

Step 4

In another saucepan, melt 2 tablespoons of butter over medium heat and whisk in the flour. Cook for 1-2 minutes, stirring constantly, to create a roux.

Step 5

Gradually whisk the warm milk into the roux, ensuring there are no lumps. Continue to cook, whisking frequently, until the mixture thickens (about 2-3 minutes).

Step 6

Remove the saucepan from heat and whisk in the 1/3 cup of granulated sugar. Let the mixture cool for 5 minutes before whisking in the egg yolks, Grand Marnier, and orange zest. Set aside.

Step 7

In a clean, dry bowl, beat egg whites and cream of tartar with an electric mixer on medium-high speed until soft peaks form. Gradually add 1 tablespoon of granulated sugar and continue beating until stiff peaks form.

Step 8

Fold one-third of the egg white mixture into the Grand Marnier base to lighten it, then gently fold in the remaining egg whites until just combined. Be careful not to overmix to preserve the airiness.

Step 9

Spoon the soufflé mixture evenly into the prepared ramekins, filling them almost to the top. Smooth the surface with a spatula, and run your thumb around the rim of each ramekin to help the soufflés rise evenly.

Step 10

Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the soufflés are puffed and golden brown on top (do not open the oven during baking to prevent collapse).

Step 11

Remove the soufflés from the oven and dust with powdered sugar. Serve immediately and enjoy the delicate blend of orange flavors.
