Directions

Step 1

Rinse the Arborio rice under cold water until the water runs clear to remove excess starch. Drain and set aside.

In a medium-sized saucepan, combine the whole milk, heavy cream, and sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add both the seeds and the pod to the pan. Place the saucepan over medium heat and bring the mixture to a gentle simmer.
