Ingredients

  • 2 cups Gram flour (besan)
  • 1 cup Ghee (clarified butter)
  • 1 cup Granulated sugar
  • 0.5 cup Water
  • 4 pods Green cardamom pods (crushed into a powder)
  • 2 tablespoons Chopped almonds or pistachios (optional for garnish)

Directions

Step 1

In a heavy-bottomed pan, heat the ghee over medium heat. Once melted, lower the heat and add the gram flour (besan).

Stir continuously with a spatula to avoid lumps. Roast the gram flour in the ghee for 12–15 minutes, or until it turns golden brown and emits a nutty aroma. Be sure to stir constantly to prevent burning.

Meanwhile, in a separate saucepan, combine the sugar and water to make the sugar syrup. Heat over medium heat, stirring until the sugar dissolves completely.
