Directions

Step 1

Preheat your grill to medium-high heat (approximately 400°F or 200°C).

Slice the zucchini and eggplant into 1/4-inch thick rounds. Cut the red bell peppers into quarters and remove the seeds and stem. Peel and slice the red onion into 1/4-inch thick rounds. Trim the woody ends off the asparagus.
