Ingredients

  • 3 cups Whole milk
  • 1 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 0.25 teaspoons Salt
  • 4 Egg yolks
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract
  • 4 Bananas (ripe but firm)
  • 45 Vanilla wafers
  • 1 cup Whipping cream
  • 2 tablespoons Powdered sugar

Directions

Step 1

In a medium saucepan, whisk together the milk, granulated sugar, cornstarch, and salt over medium heat until smooth.

Step 2

Cook the mixture, stirring constantly, until it begins to thicken and bubble slightly, about 5-7 minutes.

Step 3

In a small bowl, lightly whisk the egg yolks. Slowly add about 1/2 cup of the hot milk mixture into the yolks while whisking continuously to temper the eggs.

Step 4

Pour the tempered yolks back into the saucepan, stirring constantly, and cook for another 2-3 minutes until the custard thickens and coats the back of a spoon.

Step 5

Remove the saucepan from the heat and stir in the butter and vanilla extract until fully combined. Allow the custard to cool slightly.

Step 6

While the custard cools, peel and slice the bananas into thin rounds.

Step 7

In a glass trifle dish or individual serving cups, layer vanilla wafers on the bottom, followed by a layer of banana slices, and then a layer of custard. Repeat the layers until all ingredients are used, finishing with a layer of custard on top.

Step 8

Cover the dish with plastic wrap, pressing it gently onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 3 hours or overnight for best results.

Step 9

Just before serving, whip the whipping cream and powdered sugar together in a chilled bowl until soft peaks form.

Step 10

Spoon or pipe the whipped cream on top of the pudding and garnish with additional banana slices or crushed vanilla wafers, if desired.

Step 11

Serve cold and enjoy!
