Ingredients

  • 2 sheets puff pastry sheets
  • 200 grams Gouda cheese
  • 100 grams roasted cashews
  • 2 tablespoons heavy cream
  • 1 large egg
  • 2 tablespoons all-purpose flour
  • 2 teaspoons honey
  • 1 teaspoon fresh thyme leaves
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Lightly dust a clean work surface with all-purpose flour. Roll out the puff pastry sheets to ensure they are evenly thick and slightly larger than their original size.

Step 3

Using a 2.5-inch round cookie cutter, cut 12 circles from the puff pastry sheets. Place them on the prepared baking sheet, leaving a small gap between each piece.

Step 4

Grate the Gouda cheese and chop the roasted cashews into small pieces. Combine them in a mixing bowl.

Step 5

Add the heavy cream, honey, fresh thyme leaves, salt, and black pepper to the Gouda and cashew mixture. Stir well until evenly combined.

Step 6

Spoon about 1 tablespoon of the filling onto the center of each puff pastry circle, spreading it slightly but leaving a small border around the edges.

Step 7

In a small bowl, beat the egg to create an egg wash. Use a pastry brush to lightly brush the edges of the puff pastry circles for a golden finish.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the pastry is puffed and golden brown.

Step 9

Remove the baking sheet from the oven and allow the bouchees to cool slightly before serving.

Step 10

Serve warm as an appetizer or snack, and optionally drizzle with a bit more honey for added sweetness.
