Ingredients

  • 4 pieces Beef tenderloin steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, minced
  • 2 cloves Garlic, minced
  • 1 cup Dry white wine
  • 1 cup Beef stock
  • 0.5 cup Heavy cream
  • 0.5 cup Gorgonzola cheese, crumbled
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the beef tenderloin steaks on both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes on each side, or until they reach your desired level of doneness. Remove the steaks from the skillet, cover with foil, and let them rest.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, stir in the minced shallots and garlic, cooking for 2-3 minutes until fragrant and softened.

Step 4

Deglaze the skillet by adding the dry white wine, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Step 5

Let the wine simmer for 2 minutes, then add the beef stock. Continue to simmer for 3-4 minutes to reduce slightly.

Step 6

Pour in the heavy cream, stirring to combine, and cook for another 2-3 minutes until the sauce thickens.

Step 7

Stir in the crumbled Gorgonzola cheese and let it melt into the sauce, creating a creamy texture.

Step 8

Plate the rested steaks and spoon the Gorgonzola sauce generously over the top.

Step 9

Garnish with fresh parsley and serve immediately with your choice of side dishes, like mashed potatoes or roasted vegetables.
