Ingredients

  • 12 oz Elbow macaroni
  • 4 tbsp Unsalted butter
  • 3 tbsp All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 5 oz Gorgonzola cheese, crumbled
  • 1 cup Sharp white cheddar cheese, shredded
  • 1 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 0.25 tsp Paprika (optional)
  • 1 cup Panko breadcrumbs
  • 2 tbsp Olive oil

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 2

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 3

In a large saucepan over medium heat, melt the butter. Once melted, stir in the flour and cook for 1-2 minutes, whisking constantly, until lightly golden to create a roux.

Step 4

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Bring to a simmer, stirring frequently, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

Step 5

Reduce the heat to low and stir in the crumbled gorgonzola, white cheddar, and half of the Parmesan cheese. Stir until the cheese has completely melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt, black pepper, and paprika (if using). Taste and adjust the seasoning as needed.

Step 7

Add the cooked macaroni to the cheese sauce, mixing until thoroughly coated. Pour the macaroni and cheese mixture into the prepared baking dish.

Step 8

In a small bowl, combine the panko breadcrumbs, remaining Parmesan cheese, and olive oil. Stir until the breadcrumbs are evenly coated.

Step 9

Sprinkle the breadcrumb mixture evenly over the top of the mac and cheese.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Step 11

Remove from the oven and let cool for 5 minutes before serving. Enjoy your creamy and flavorful Gorgonzola Mac N Cheese!
