Ingredients

  • 4 pieces Chicken thighs (boneless, skinless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Garlic (minced)
  • 1 cup Chicken broth
  • 0.75 cup Heavy cream
  • 0.5 cup Gorgonzola cheese (crumbled)
  • 1 tablespoon Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Pat the chicken thighs dry using paper towels. Season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil.

Step 3

Once the oil is hot, sear the chicken thighs for about 4-5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, then add the minced garlic. Sauté for 1-2 minutes until fragrant.

Step 5

Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet, and let it simmer for 2-3 minutes to reduce slightly.

Step 6

Stir in the heavy cream and Gorgonzola cheese. Continue stirring until the cheese has melted and the sauce is smooth.

Step 7

Return the chicken thighs to the skillet, nestling them in the sauce. Reduce the heat to low, cover, and let the chicken simmer for 12-15 minutes, or until fully cooked and the internal temperature reaches 165°F (74°C).

Step 8

Taste the sauce and adjust seasoning if necessary. If the sauce is too thick, add a splash of chicken broth to thin it out.

Step 9

Garnish with fresh parsley if desired and serve hot. Pair with mashed potatoes, pasta, or a green salad for a complete meal.
