Ingredients

  • 1.5 pounds ground beef (80% lean)
  • 0.5 pounds ground pork
  • 1 medium onion, finely chopped
  • 2 cloves garlic cloves, minced
  • 1 cup breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 0.25 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 cup ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 teaspoon apple cider vinegar (for glaze)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, dried parsley, salt, black pepper, and paprika.

Step 3

Mix the ingredients gently with your hands until just combined, being careful not to overmix as this will make the meatloaf dense.

Step 4

Transfer the mixture into the prepared loaf pan and press it down gently, shaping the top into a smooth dome.

Step 5

In a small bowl, prepare the glaze by combining the ketchup, brown sugar, and apple cider vinegar. Stir until smooth.

Step 6

Brush half of the glaze over the top of the meatloaf, reserving the other half for later.

Step 7

Bake the meatloaf in the preheated oven for 45 minutes. Remove it from the oven, brush the remaining glaze over the top, and return it to the oven.

Step 8

Bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) using a meat thermometer.

Step 9

Let the meatloaf rest for 10 minutes before slicing to allow the juices to redistribute. Serve warm with your favorite sides!
