Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 0.5 cups unsweetened applesauce
  • 0.25 cups vegetable oil
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 1 cups grated carrot
  • 1 cups grated apple (peeled)
  • 0.5 cups chopped walnuts or pecans
  • 0.5 cups raisins

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

Step 3

In a separate medium bowl, combine the granulated sugar, brown sugar, applesauce, vegetable oil, eggs, and vanilla extract. Whisk until smooth and fully incorporated.

Step 4

Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.

Step 5

Fold in the grated carrot, grated apple, chopped nuts, and raisins until evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
