Ingredients

  • 400 grams Chickpeas (cooked or canned, drained and rinsed)
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 pieces Pita bread
  • 4 tablespoons Tahini
  • 2 tablespoons Lemon juice
  • 2 tablespoons Water
  • 1 clove Garlic (minced)
  • 200 grams Cherry tomatoes (sliced)
  • 1 medium Cucumber (sliced thinly)
  • 0.5 medium Red onion (thinly sliced)
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Spread the chickpeas on a baking sheet lined with parchment paper. Pat them dry with a paper towel.

Step 3

In a small bowl, mix olive oil, ground cumin, ground coriander, smoked paprika, ground turmeric, garlic powder, salt, and black pepper to create the spice mixture.

Toss the chickpeas with the spice mixture until evenly coated.
