  • 0.5 cup unsweetened shredded coconut (for coating, optional)

Directions

Step 1

In a food processor, combine the pitted dates, dried cranberries, freeze-dried strawberries, and cashews. Pulse until the mixture comes together in a slightly sticky, crumbly paste. This may take 2-3 minutes of processing.

Step 2

Add cocoa powder, vanilla extract, and sea salt to the mixture. Process again until everything is well blended and the mixture forms a cohesive, moldable dough. Scrape down the sides of the processor bowl as needed.

Using your hands, scoop approximately 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture to form about 12 truffles.
