Ingredients

  • 480 grams Whole wheat flour
  • 360 milliliters Warm water (110°F/45°C)
  • 60 grams Honey
  • 30 grams Olive oil (or any neutral oil)
  • 7 grams Instant yeast
  • 8 grams Salt
  • 10 grams Vital wheat gluten (optional for better structure)

Directions

Step 1

In a large mixing bowl, combine the warm water, honey, and instant yeast. Stir gently and let the mixture sit for 5-10 minutes until frothy. This indicates the yeast is active.

Step 2

Add olive oil, salt, and vital wheat gluten (if using) to the yeast mixture. Stir to combine.

Step 3

Gradually add the whole wheat flour to the wet ingredients, about one cup at a time, mixing with a wooden spoon or dough hook attachment on a stand mixer.

Step 4

Once the dough comes together and is slightly sticky but manageable, transfer it to a lightly floured surface and knead by hand for 8-10 minutes, or until the dough is soft, elastic, and smooth. If using a stand mixer, knead with the dough hook for 6-7 minutes.

Step 5

Grease a large bowl with a bit of olive oil and place the dough inside, turning it to coat the surface. Cover the bowl with a damp kitchen towel or plastic wrap and let the dough rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 6

Punch down the dough to release air bubbles. Turn it out onto a lightly floured surface and shape it into a loaf.

Step 7

Place the shaped dough into a lightly greased 9x5-inch loaf pan. Cover and let it rise for another 30-45 minutes, or until it has risen slightly above the edge of the pan.

Step 8

Preheat your oven to 375°F (190°C). Once preheated, bake the bread for 30-35 minutes, or until the top is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 9

Remove the bread from the oven and let it cool in the pan for 5 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 10

Store the bread in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
