Ingredients

  • 2 cups golden yam (peeled and diced)
  • 0.5 cups unsweetened cocoa powder
  • 0.75 cups almond flour
  • 0.5 cups maple syrup
  • 0.25 cups melted coconut oil
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking powder
  • 0.25 teaspoons salt
  • 0.5 cups dark chocolate chips
  • 0.25 cups chopped walnuts (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper and lightly grease it with coconut oil.

Step 2

Place the diced yams in a medium saucepan, cover with water, and bring to a boil over medium heat. Cook for 10-12 minutes or until fork-tender. Drain and let cool slightly.

Step 3

Transfer the cooked yams to a blender or food processor and blend until smooth. You should have about 1 cup of yam puree.

Step 4

In a large mixing bowl, whisk together the yam puree, maple syrup, melted coconut oil, and vanilla extract until well combined.

Step 5

In a separate bowl, mix the almond flour, cocoa powder, baking powder, and salt.

Step 6

Gradually fold the dry ingredients into the wet ingredients until a smooth batter forms. Be careful not to overmix.

Step 7

Stir in the chocolate chips and walnuts (if using).

Step 8

Pour the batter evenly into the prepared baking pan and smooth the top with a spatula.

Step 9

Bake for 30-35 minutes, or until the center is set and a toothpick inserted into the middle comes out with moist crumbs (not wet batter).

Step 10

Remove from the oven and let the brownies cool completely in the pan on a wire rack before slicing into squares.

Step 11

Serve and enjoy your rich, fudgy Golden Yam Brownies!
