Ingredients

  • 1 medium (about 3 cups diced) Ripe pineapple
  • 1 small (finely chopped) Onion
  • 1 tablespoon (grated) Fresh ginger
  • 2 cloves (minced) Garlic
  • 0.25 cup White vinegar
  • 0.5 cup Brown sugar
  • 0.25 cup Golden raisins
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Red chili flakes
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (freshly ground) Black pepper
  • 0.5 cup Water

Directions

Step 1

Peel the pineapple, remove the core, and dice the flesh into small chunks. Set aside.

Step 2

In a medium saucepan, heat a splash of water over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened.

Stir in the grated ginger and minced garlic, cooking for another minute until fragrant.
