Ingredients

  • 300 grams Sweetened shredded coconut
  • 200 grams Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground turmeric
  • 0.25 teaspoon Salt
  • 2 large Egg whites
  • 50 grams Granulated sugar
  • 100 grams Dark chocolate (optional, for drizzling)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, turmeric, and salt. Stir until the mixture is thoroughly combined and takes on a light golden hue from the turmeric.

Step 3

In a separate bowl, use a hand or stand mixer to beat the egg whites on medium speed until frothy. Gradually add the granulated sugar while continuing to beat until stiff peaks form. This should take about 3-4 minutes.

Step 4

Gently fold the beaten egg whites into the coconut mixture. Use a spatula to incorporate it gently to avoid deflating the egg whites.

Step 5

Using a small cookie scoop or your hands, form the mixture into small balls (about 1.5 inches in diameter) and place them on the prepared baking sheet, leaving about 1 inch of space between each macaroon.

Step 6

Bake the macaroons in the preheated oven for 18-20 minutes, or until the tops are lightly golden and the bottoms are slightly browned.

Step 7

Remove the baking sheet from the oven and let the macaroons cool on the parchment paper for about 10 minutes before transferring them to a wire rack to cool completely.

Step 8

If desired, melt the dark chocolate in a microwave-safe bowl in 15-second intervals, stirring between each interval, until smooth. Drizzle the melted chocolate over the cooled macaroons or dip the bottoms of the macaroons into the chocolate for an extra indulgent touch.

Step 9

Let the chocolate set fully before serving. Store the macaroons in an airtight container at room temperature for up to 5 days.
