Ingredients

  • 200 g Rice noodles
  • 250 g Chicken breast or shrimp (peeled and deveined)
  • 2 Eggs
  • 100 g Bean sprouts
  • 3 cloves Garlic, minced
  • 3 stalks Green onions, sliced
  • 30 g Crushed peanuts
  • 50 g Carrots, julienned
  • 2 tbsp Cooking oil (such as vegetable or peanut oil)
  • 2 tbsp Tamarind paste
  • 2 tbsp Fish sauce
  • 1 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 0.5 tsp Chili flakes (optional)
  • 2 Lime wedges
  • 10 g Cilantro leaves (for garnish)

Directions

Step 1

Soak the rice noodles in warm water for 20-30 minutes until softened. Drain and set aside.

Step 2

If using chicken, slice it thinly. If using shrimp, ensure they are peeled and deveined.

Step 3

In a small bowl, mix tamarind paste, fish sauce, soy sauce, brown sugar, and chili flakes (if using). Stir well and set aside.

Heat 1 tablespoon of cooking oil in a large wok or skillet over medium-high heat. Add the chicken or shrimp and cook until fully cooked (chicken should be no longer pink, and shrimp should be opaque). Remove and set aside.

In the same wok, add the remaining tablespoon of oil. Toss in minced garlic and cook for 30 seconds until fragrant.
