Ingredients

  • 6 medium carrots
  • 1 large yellow onion
  • 2 large garlic cloves

  • 1 teaspoon ground cumin

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons optional fresh parsley or cilantro (for garnish)

Directions

Step 1

Peel and chop the carrots into 1-inch pieces. Finely dice the onion and mince the garlic cloves. Grate the fresh ginger.

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, or until it becomes translucent.
