Ingredients

  • 0.5 cup Fresh parsley
  • 0.5 cup Fresh cilantro
  • 0.25 cup Fresh chives
  • 1 clove Garlic clove
  • 0.5 cup Greek yogurt
  • 0.25 cup Mayonnaise
  • 2 tablespoons Lemon juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

Rinse the fresh parsley, cilantro, and chives under cold running water. Pat them dry with a clean kitchen towel or paper towel.

Step 2

Roughly chop the parsley, cilantro, and chives and place them in a blender or food processor.

Step 3

Peel the garlic clove and add it to the blender or food processor.

Step 4

Add the Greek yogurt, mayonnaise, lemon juice, olive oil, apple cider vinegar, salt, and black pepper to the blender or food processor.

Step 5

Pour in 2 tablespoons of water to help thin the dressing to a pourable consistency.

Step 6

Blend the mixture on high speed until smooth and creamy. If the dressing is too thick, add an additional tablespoon of water, one at a time, until the desired consistency is achieved.

Step 7

Taste the dressing and adjust seasoning as needed, adding more salt, pepper, or lemon juice to suit your preference.

Step 8

Transfer the dressing to an airtight container or jar and store in the refrigerator for up to one week.

Step 9

Shake or stir before using, and drizzle over your favorite salad, grain bowl, or roasted vegetables.
