Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 medium celery stalks, diced
  • 2 cloves minced garlic
  • 2 tbsp tomato paste
  • 1 cup low-sodium chicken broth
  • 1 cup frozen peas
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 large russet potatoes, peeled and cubed
  • 3 tbsp unsalted butter
  • 0.5 cup milk (or cream)
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet over medium heat, warm the olive oil. Add the diced onion, carrots, and celery, cooking until softened, about 5–7 minutes.

Step 3

Add the minced garlic and ground turkey to the skillet. Cook until the turkey is browned and fully cooked, breaking it up with a spoon, about 5 minutes.

Step 4

Stir in the tomato paste, ensuring it is evenly distributed. Cook for another minute.

Step 5

Pour in the chicken broth and add the Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper. Bring the mixture to a simmer.

Step 6

Stir in the frozen peas and simmer for another 5 minutes. Remove the skillet from heat and set aside.

Step 7

Meanwhile, prepare the mashed potatoes: Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15 minutes.

Step 8

Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with additional salt to taste.

Step 9

Spread the turkey mixture evenly into the bottom of a 9x13-inch baking dish. Top with the mashed potatoes, spreading them out evenly to cover the filling entirely.

Step 10

If desired, sprinkle shredded cheddar cheese over the top of the mashed potatoes for a golden, cheesy crust.

Step 11

Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the top is slightly golden and the filling is bubbling around the edges.

Step 12

Allow the pie to cool for 5–10 minutes before serving. Enjoy your Gobble-Up Turkey Cottage Pie!
