Ingredients

  • 8 piece medium-sized tomatoes
  • 150 grams goat cheese
  • 10 piece fresh basil leaves
  • 2 clove garlic, minced
  • 3 tablespoons breadcrumbs
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Slice the tops off the tomatoes and set them aside. Carefully scoop out the pulp and seeds from the inside using a spoon, creating a hollow cavity. Be careful not to puncture the sides.

Lightly sprinkle the inside of each tomato with a pinch of salt. Arrange them upside down on a paper towel-lined tray to drain excess liquid while prepping the filling.

In a mixing bowl, combine the goat cheese, minced garlic, chopped fresh basil, salt, and pepper. Mix thoroughly until smooth and creamy.
