Ingredients

  • 2 sheets puff pastry sheets
  • 2 ripe pears
  • 150 grams goat cheese
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 quarter cup walnuts, chopped
  • 1 egg
  • 1 tablespoon water
  • 1 tablespoon all-purpose flour

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Lightly flour your work surface and roll out the puff pastry sheets. Cut each sheet into 4 equal squares, making a total of 8 squares.

Step 3

Transfer the pastry squares to the prepared baking sheet and use a knife to lightly score a 1/2-inch border around the edges of each square, being careful not to cut all the way through.

Step 4

In a small bowl, combine the goat cheese, honey, and fresh thyme leaves. Mix until smooth and well combined.

Step 5

Peel, core, and thinly slice the pears.

Step 6

Spread a thin layer of the goat cheese mixture onto the center of each pastry square, staying within the scored border.

Step 7

Arrange the pear slices decoratively on top of the goat cheese. Sprinkle chopped walnuts over the pears.

Step 8

In another small bowl, whisk together the egg and water to make an egg wash. Brush the edges of the pastry squares with the egg wash.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Step 10

Remove the tarts from the oven and let them cool for a few minutes. Optionally, drizzle a little extra honey over the top before serving.
