Ingredients

  • 12 oz Pasta (penne or fettuccine)
  • 1 lb Asparagus
  • 4 oz Goat cheese
  • 1 tbsp Lemon zest

  • 2 tbsp Olive oil

  • 0.5 tsp Black pepper
  • 0.25 cup Parmesan cheese (optional, for garnish)
  • 2 tbsp Fresh basil (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the pasta aside.

While the pasta cooks, wash and trim the woody ends of the asparagus. Cut the asparagus into 2-inch pieces.
