Ingredients

  • 8 ounces Goat cheese log
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 0.25 cup Olive oil

Directions

Step 1

Chill the goat cheese log in the freezer for 15 minutes to make slicing easier.

Step 2

Slice the goat cheese log into 8 even medallions, about 1/2-inch thick each. Place the slices on a parchment-lined baking sheet and return them to the freezer while preparing the breading station.

Step 3

Set up a breading station with three shallow bowls: one with the flour, one with the eggs (beaten), and one with the breadcrumbs. Mix the salt, black pepper, and dried thyme into the bowl with the breadcrumbs.

Step 4

Remove the goat cheese medallions from the freezer. Dip each medallion into the flour, shaking off excess, then into the beaten egg, and finally into the breadcrumb mixture, pressing gently to ensure an even coating.

Step 5

Place the breaded medallions back on the parchment-lined baking sheet and refrigerate them for 10–15 minutes to set the coating.

Step 6

Heat the olive oil in a nonstick skillet over medium heat. Once the oil is shimmering, add the goat cheese medallions in batches, making sure not to overcrowd the pan.

Step 7

Cook each medallion for 1–2 minutes per side or until golden brown and crispy. Carefully transfer them to a plate lined with paper towels to drain excess oil.

Step 8

Serve warm as an appetizer, on a bed of mixed greens, or as a topping for your favorite salad.
