Ingredients

  • 400 g Canned chickpeas
  • 100 g Breadcrumbs
  • 100 g Goat cheese
  • 15 g Fresh parsley
  • 15 g Fresh cilantro
  • 2 pieces Garlic cloves
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp All-purpose flour
  • 4 tbsp Olive oil
  • 4 pieces Pita bread
  • 100 g Greek yogurt
  • 2 tbsp Tahini
  • 1 tbsp Lemon juice
  • 1 piece Cucumber
  • 1 piece Tomato
  • 50 g Lettuce

Directions

Step 1

Drain and rinse the canned chickpeas. Pat them dry with a clean kitchen towel to remove excess moisture.

Step 2

In a food processor, combine the chickpeas, breadcrumbs, parsley, cilantro, garlic, cumin, coriander, paprika, salt, and black pepper. Pulse until the mixture is coarse but holds together when squeezed.

Crumble the goat cheese and gently fold it into the falafel mixture to distribute it evenly.
