Ingredients

  • 2 sheets Frozen puff pastry sheets
  • 4 cups Fresh spinach
  • 6 ounces Goat cheese
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 large Egg
  • 1 tablespoon Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons All-purpose flour

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Defrost the puff pastry sheets according to the package instructions. Once pliable, lightly flour your work surface and roll them out gently to eliminate creases.

Step 3

Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.

Step 4

Add the fresh spinach to the skillet, cooking for 2–3 minutes until wilted. Remove from heat and transfer to a bowl. Allow to cool slightly.

Step 5

Stir in goat cheese, grated Parmesan cheese, salt, black pepper, and dried thyme to the spinach mixture until well combined.

Step 6

On a floured surface, cut each puff pastry sheet into 4 equal squares (for a total of 8 squares).

Step 7

Place about 2 tablespoons of the spinach and cheese filling in the center of each square.

Step 8

In a small bowl, whisk together the egg and water to make an egg wash.

Step 9

Brush the edges of each puff pastry square with the egg wash. Fold each square into a triangle, enclosing the filling, and press the edges together with a fork to seal.

Step 10

Transfer the turnovers to the prepared baking sheet and brush the tops with the remaining egg wash for a golden finish.

Step 11

Using a sharp knife, make a small slit on top of each turnover to allow steam to escape during baking.

Step 12

Bake in the preheated oven for 20–25 minutes, or until the turnovers are puffed and golden brown.

Step 13

Let the turnovers cool slightly before serving. Enjoy them warm or at room temperature.
