Ingredients

  • 110 grams unsalted butter
  • 100 grams light brown sugar
  • 2 tablespoons golden syrup
  • 200 grams plain flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 50 grams crushed nuts (walnuts or pecans)
  • 1 tablespoon milk (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a medium-sized saucepan over low heat, melt the unsalted butter, light brown sugar, and golden syrup together until smooth. Stir occasionally and remove from the heat once melted.

Step 3

In a large mixing bowl, sift together the plain flour, ground ginger, and baking soda. Add the crushed nuts and combine.

Step 4

Pour the melted butter mixture into the dry ingredients and mix thoroughly until a dough begins to form. If the dough is too crumbly, add up to 1 tablespoon of milk, a little at a time, until it comes together.

Step 5

Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls. Flatten each ball slightly with the palm of your hand to form a disc.

Step 6

Place the discs onto the prepared baking tray, leaving enough space between each to allow for spreading.

Step 7

Bake the gingernuts in the preheated oven for 10-12 minutes, or until golden brown and firm to the touch.

Step 8

Remove the tray from the oven and allow the biscuits to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve with tea or coffee, or store in an airtight container for up to a week. Enjoy the nutty gingery goodness!
