Ingredients

  • 16 oz gnocchi
  • 2 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 pieces garlic cloves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 cups fresh spinach
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions. Once cooked, drain and set aside.

Step 2

While the gnocchi is cooking, prepare the chicken by patting the breasts dry. Season both sides of the chicken with 0.5 tsp salt and 0.25 tsp black pepper.

Step 3

In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the chicken breasts and cook 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside to rest. Once cool enough to handle, slice into thin strips.

In the same skillet, reduce the heat to medium-low and add 2 tbsp of butter. Once melted, add the minced garlic cloves and sauté for 1 minute until fragrant.

Pour in 1 cup of chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let it simmer for 2 minutes.

Stir in 1 cup of heavy cream and 1 cup of grated parmesan cheese. Cook, stirring frequently, until the cheese has melted and the sauce has thickened, about 3-4 minutes.

Add 2 cups of fresh spinach to the sauce and let it wilt for 1-2 minutes.

Return the sliced chicken and cooked gnocchi to the skillet, tossing gently to coat everything in the creamy sauce. Add 0.25 tsp of red pepper flakes, if using, for a touch of heat.

Taste and adjust seasoning with additional salt and pepper, if necessary.
