Ingredients

  • 250 grams Walnuts
  • 5 large Eggs
  • 150 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper.

Step 2

Place the walnuts in a food processor and pulse until finely ground. Be careful not to overprocess to avoid turning them into walnut butter.

Step 3

Separate the eggs into two clean bowls, one for the yolks and the other for the whites.

Step 4

In the bowl with the yolks, add the granulated sugar and beat with a hand mixer or whisk until the mixture becomes thick and pale yellow, about 2-3 minutes.

Step 5

Stir in the vanilla extract, ground walnuts, and salt, mixing until well combined.

Step 6

In the other bowl, beat the egg whites with a clean mixer until they form stiff peaks.

Step 7

Gently fold the beaten egg whites into the walnut mixture in three additions, being careful to maintain as much air in the batter as possible.

Step 8

Pour the batter into the prepared springform pan and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.

Step 10

Remove the cake from the oven and allow it to cool completely in the pan. Once cooled, release the edges of the springform pan and transfer the cake to a serving plate.

Step 11

If desired, dust the top with powdered sugar before serving. Slice and enjoy!
