Ingredients

  • 200 grams Gluten free all-purpose flour
  • 50 grams Tapioca starch
  • 1 teaspoon Xanthan gum
  • 2.25 teaspoons Dried active yeast
  • 1 teaspoon Granulated sugar
  • 300 milliliters Warm milk
  • 100 milliliters Warm water
  • 0.5 teaspoons Salt
  • 1 tablespoon Butter or oil (for greasing)

Directions

Step 1

In a large mixing bowl, combine the gluten free all-purpose flour, tapioca starch, xanthan gum, and salt. Whisk to blend evenly.

Step 2

In a small bowl, mix the warm milk, warm water, and sugar. Sprinkle the dried active yeast over the top and let it sit for 5-10 minutes until foamy.

Step 3

Make a well in the dry ingredients and pour in the yeast mixture. Stir the ingredients together until a thick, smooth batter forms. Cover the bowl with a clean kitchen towel and let it rise in a warm place for 30 minutes.

Step 4

After 30 minutes, the batter should be bubbly and slightly risen. Stir it gently to knock out some of the excess air.
