Ingredients

  • 3 cups Unsweetened shredded coconut
  • 0.75 cups Sweetened condensed milk
  • 1 teaspoon Pure vanilla extract
  • 2 large Egg whites
  • 0.25 teaspoons Salt
  • 4 ounces Optional: Semi-sweet chocolate

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until evenly coated.

In a separate bowl, use a hand mixer or whisk to beat the egg whites and salt until stiff peaks form.

Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites.
