Ingredients

  • 150 grams Gluten-free all-purpose flour blend
  • 115 grams Unsalted butter, cold and cubed
  • 200 grams Sharp cheddar cheese, finely grated
  • 50 grams Parmesan cheese, finely grated
  • 1 teaspoon Ground paprika
  • 0.25 teaspoon Ground cayenne pepper (optional, for heat)
  • 0.5 teaspoon Salt
  • 1 large Egg
  • 1 tablespoon Cold water

Directions

Step 1

Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a food processor, combine the gluten-free flour, cold cubed butter, paprika, cayenne pepper (if using), and salt. Pulse until the mixture resembles coarse crumbs.

Add the grated cheddar and Parmesan to the food processor. Pulse again until evenly combined.

In a small bowl, whisk together the egg and cold water. Add this mixture to the food processor and pulse until the dough starts to come together into a ball.

Turn the dough out onto a clean surface and gently knead it a couple of times to form a smooth, cohesive ball. Do not overwork the dough.
