Ingredients

  • 1 large (about 1 1/2 cups grated) Zucchini
  • 1 cup Almond flour
  • 2 tablespoons Ground flaxseed
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Dried oregano
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much liquid as possible to prevent the crackers from becoming soggy.

Step 3

In a mixing bowl, combine the squeezed zucchini, almond flour, ground flaxseed, olive oil, salt, garlic powder, oregano, and black pepper.

Mix thoroughly until a dough forms. The mixture should hold together when pressed. If it seems too dry, add a teaspoon of olive oil. If it is too wet, add a small amount of almond flour.
