Ingredients

  • 300 grams Carrots
  • 2 large Eggs
  • 50 grams Tapioca flour
  • 15 grams Ground flaxseed
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

Peel and finely grate the carrots using a box grater or food processor. You should end up with around 300 grams of grated carrot.

Step 3

In a mixing bowl, combine the grated carrots, eggs, tapioca flour, ground flaxseed, olive oil, salt, and pepper. Mix well until a cohesive batter forms.

Step 4

Scoop portions of the batter onto the lined baking sheet, forming circles about 15 cm (6 inches) in diameter. Use a spatula to spread the batter evenly into thin layers.

Step 5

Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the wraps are set and slightly golden on the edges.

Remove the wraps from the oven and allow them to cool for 5 minutes before gently peeling them off the parchment paper.
