Ingredients

  • 1.5 cups Grated zucchini
  • 1 cup Grated carrot
  • 1 cup Chopped spinach
  • 0.5 cup Cooked and mashed sweet potato
  • 0.5 cup Chickpea flour (besan)
  • 0.25 cup Gluten-free breadcrumbs
  • 2 tablespoons Chopped green onions
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Olive oil (for frying)

Directions

Step 1

Start by grating the zucchini and carrot. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess water as possible. Set aside.

Step 2

In a large mixing bowl, combine the grated zucchini, grated carrot, chopped spinach, and mashed sweet potato. Mix well.

Step 3

Add the chickpea flour, gluten-free breadcrumbs, green onions, garlic powder, paprika, ground cumin, salt, and black pepper to the bowl. Mix until all the ingredients are evenly combined. The mixture should come together into a slightly sticky dough. If it feels too wet, add an extra tablespoon of chickpea flour or breadcrumbs.

Step 4

Portion the mixture into small patties (about the size of your palm), flattening them slightly for even cooking.

Step 5

In a large non-stick skillet, heat the olive oil over medium heat. Once the oil is hot, add the patties in batches, making sure not to overcrowd the pan.

Step 6

Cook the patties for about 3-4 minutes on each side, or until golden brown and firm to the touch. Adjust the heat as needed to prevent burning.

Step 7

Transfer the cooked patties to a plate lined with paper towels to drain any excess oil.

Step 8

Serve the gluten-free vegetable patties warm with your favorite dipping sauce or as a side dish. Enjoy!
