Ingredients

  • 2 pieces Turkey breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 cup Gluten-free all-purpose flour
  • 2 large Eggs
  • 2 tablespoons Unsweetened almond milk (or any preferred gluten-free milk)
  • 1 cup Gluten-free breadcrumbs
  • 0.5 teaspoon Paprika
  • 3 tablespoons Avocado oil (or another high-heat oil)
  • 4 pieces Lemon wedges

Directions

Step 1

Place the turkey breasts between two sheets of plastic wrap or parchment paper. Pound them gently with a meat mallet or rolling pin until they are about 1/4 inch thick.

Step 2

Season the turkey cutlets on both sides with salt, black pepper, and garlic powder.

Step 3

Set up a breading station with three shallow bowls. In the first bowl, place the gluten-free flour. In the second bowl, whisk together the eggs and almond milk. In the third bowl, mix the gluten-free breadcrumbs and paprika.

Step 4

Dredge each turkey cutlet in the gluten-free flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip back into the bowl. Finally, coat it in the breadcrumb mixture, pressing gently to adhere.

Step 5

Heat the avocado oil in a large skillet over medium heat. Once the oil is shimmering, add the turkey schnitzels, being careful not to overcrowd the pan.

Step 6

Cook the schnitzels for about 3-4 minutes on each side, or until they are golden brown and cooked through to an internal temperature of 165°F (74°C).

Step 7

Transfer the cooked schnitzels to a paper towel-lined plate to drain excess oil.

Step 8

Serve the schnitzels hot with lemon wedges on the side for squeezing over the top.
