Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 50 grams Almond flour
  • 1 teaspoon Xanthan gum
  • 1.5 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 150 grams Granulated sugar
  • 115 grams Unsalted butter (softened)
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 120 milliliters Milk (dairy or plant-based)
  • 4 medium Plums (ripe, pitted, and sliced)
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch springform or round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the gluten-free all-purpose flour, almond flour, xanthan gum, baking powder, and ground cinnamon. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the butter mixture in three additions, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.

Step 6

Pour the batter evenly into the prepared pan. Arrange the plum slices on top of the batter in a circular pattern, slightly pressing them into the surface.

Step 7

Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden brown.

Step 8

Remove the cake from the oven and let it cool in the pan for 15 minutes. Then, transfer it to a wire rack to cool completely.

Step 9

Sprinkle the cooled plumcake with powdered sugar, if desired, before serving. Slice and enjoy!
