Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Salt
  • 0.75 cup Warm water
  • 2 tablespoons Ghee (clarified butter)
  • 1.5 cups Sattu (roasted gram flour)
  • 2 tablespoons Pickle masala (from Indian mixed pickle)
  • 1 tablespoon Mustard oil
  • 0.5 teaspoon Carom seeds (Ajwain)
  • 1 teaspoon Ginger (grated)
  • 1 tablespoon Green chilies (finely chopped)
  • 2 tablespoons Coriander leaves (chopped)
  • 1 tablespoon Lemon juice

Directions

Step 1

In a bowl, mix the gluten-free all-purpose flour, psyllium husk powder, and salt. Add ghee and rub it into the flour until the mixture resembles breadcrumbs.

Step 2

Gradually add warm water and knead the dough until it is smooth and pliable. Cover and let it rest for 20 minutes.

Step 3

For the stuffing, mix sattu, pickle masala, mustard oil, carom seeds, grated ginger, green chilies, coriander leaves, and lemon juice in a bowl. Adjust salt to taste and set aside.

Step 4

Divide the rested dough into 6 equal portions. Roll each portion into a ball and flatten it slightly.

Step 5

Take one dough ball and flatten it further to make a small disc. Place 2 tablespoons of the prepared stuffing in the center.

Step 6

Carefully bring the edges of the dough together to seal the stuffing inside. Shape it into a smooth ball. Repeat for the remaining dough portions.

Step 7

Preheat your oven to 375°F (190°C). Arrange the littis on a parchment-lined baking tray.

Step 8

Bake the littis for 30-35 minutes, flipping them halfway through, until they are golden and cooked through.

Step 9

Optional: Brush the baked littis with ghee for added flavor and shine.

Step 10

Serve hot with chokha (mashed eggplant or potato side dish) and add extra ghee on the side for dipping if desired.
