Ingredients

  • 6 pieces Gluten-free tortillas
  • 2 cups Shredded rotisserie chicken (or black beans for a vegetarian option)
  • 1 cup Cheddar cheese, shredded
  • 1 medium Red bell pepper, diced
  • 1 small Red onion, diced
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (or dairy-free alternative)
  • 0.5 cup Salsa
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the shredded rotisserie chicken or black beans, shredded cheddar cheese, diced red bell pepper, diced red onion, and chopped cilantro.

Step 3

Add sour cream, salsa, ground cumin, chili powder, garlic powder, salt, and black pepper to the filling mixture. Stir everything together until well combined.

Step 4

Place a gluten-free tortilla on a flat surface. Spoon 3-4 tablespoons of the filling mixture onto the center of the tortilla. Spread it out evenly, leaving about 1 inch of space around the edges.

Step 5

Roll up the tortilla tightly, tucking in the sides as you roll. Place the roll seam-side down onto the prepared baking sheet. Repeat with the remaining tortillas and filling.

Step 6

Brush the tops of the rolls lightly with olive oil using a pastry brush. This will help them get golden and crispy while baking.

Step 7

Bake the rolls in the preheated oven for 8-10 minutes, or until the edges are crispy and golden brown.

Step 8

Remove the rolls from the oven and let them cool for a couple of minutes before slicing them into halves or bite-sized pieces.

Step 9

Serve warm with extra salsa, sour cream, or guacamole on the side for dipping. Enjoy!
