  • 1 whole Cucumber (thinly sliced into strips)
  • 1 whole Avocado (sliced)
  • 1 whole Carrot (julienned)
  • 8 pieces Cooked shrimp (peeled and deveined)
  • 0.25 cup Pickled ginger
  • 0.5 cup Gluten-free soy sauce or tamari (for dipping)
  • 1 teaspoon Wasabi (optional)

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Combine the rinsed rice and 2.5 cups of water in a rice cooker or pot. Cook according to the rice cooker instructions or over medium heat on the stove until all the water is absorbed (approximately 15-20 minutes).
