Ingredients

  • 400 grams Farmer's cheese (or ricotta if unavailable)
  • 2 large Eggs
  • 80 grams Gluten-free all-purpose flour
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Salt
  • 3 tablespoons Vegetable oil (for frying)
  • 2 tablespoons Powdered sugar (for serving)
  • 100 grams Sour cream or yogurt (optional, for serving)
  • 100 grams Fresh berries (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the farmer's cheese, eggs, sugar, vanilla extract, and salt. Mix well until smooth and creamy.

Step 2

Gradually add the gluten-free all-purpose flour to the cheese mixture, stirring until a soft dough forms. The dough should be slightly sticky but manageable. If it feels too wet, add a little more flour, one tablespoon at a time.

Step 3

Dust your hands and a clean surface with gluten-free flour. Divide the dough into equal portions (about 8–10 pieces) and shape each piece into a small round patty, about 1 cm thick.

Step 4

Heat a large non-stick skillet over medium heat and add the vegetable oil.

Step 5

Place the syrniki into the skillet in batches, being careful not to overcrowd. Fry for 2–3 minutes on each side, or until golden brown and cooked through.

Step 6

Transfer the cooked syrniki to a plate lined with paper towels to absorb excess oil.

Step 7

Serve warm with a dusting of powdered sugar, a dollop of sour cream or yogurt, and fresh berries if desired.
