Ingredients

  • 4 Large artichokes
  • 1 Lemon
  • 1.5 cups Gluten-free breadcrumbs
  • 0.5 cups Parmesan cheese, grated

  • 1 teaspoons Salt

  • 2 cups Water or vegetable stock

Directions

Step 1

Prepare the artichokes by trimming the stems so they sit flat, cutting off the top inch of the artichoke, and snipping the sharp tips off the leaves. Rub the cut edges with the halved lemon to prevent browning.

Gently pry open the artichokes and remove the central choke (the small, hairy part in the center) using a spoon. Set the artichokes aside.
