Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 cup Tapioca starch
  • 2.25 teaspoons Instant yeast
  • 3 tablespoons Sugar
  • 0.75 cup Warm water
  • 1 teaspoon White vinegar
  • 2 tablespoons Avocado oil
  • 1 pound Ground pork
  • 2 tablespoons Tamari (gluten-free soy sauce)
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 stalks Green onions, sliced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper
  • 1 teaspoon Baking powder
  • 12 pieces Parchment paper, cut into squares

Directions

Step 1

In a medium bowl, mix gluten-free all-purpose flour, tapioca starch, instant yeast, sugar, baking powder, and salt.

Step 2

Add warm water, white vinegar, and avocado oil to the dry ingredients. Stir until a dough forms.

Step 3

Knead the dough gently for 5-7 minutes until smooth. Cover with a towel and let it rise for 45 minutes or until doubled in size.

Step 4

While the dough rises, prepare the filling. In a skillet, cook ground pork over medium heat until fully browned and no longer pink.

Step 5

Add tamari, sesame oil, garlic, ginger, green onions, salt, and pepper to the pork. Cook for 2-3 more minutes, then set aside to cool.

Step 6

Punch down the risen dough and divide it into 12 equal portions. Roll each portion into a ball, then flatten it into a disk about 4 inches in diameter.

Step 7

Place 1-2 tablespoons of the pork filling in the center of each disk. Gather the edges of the dough and pinch them together at the top to seal the bun.

Step 8

Place each bun on a square of parchment paper to prevent sticking during steaming.

Step 9

Arrange the buns (with parchment squares) in a steamer basket, leaving enough space between them for expansion.

Step 10

Steam the buns over boiling water for 15-20 minutes, or until they are puffed up and cooked through.

Step 11

Carefully remove the buns from the steamer and let them cool for a few minutes before serving.

Step 12

Enjoy your fluffy gluten-free steamed pork buns!
