Ingredients

  • 1 cup Chickpea flour (besan)
  • 0.5 cup Rice flour
  • 0.75 cup Plain yogurt (dairy or plant-based for vegan)
  • 0.5 cup Water
  • 1 teaspoon Ginger paste
  • 1 teaspoon Green chili paste
  • 0.25 teaspoon Turmeric powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Eno fruit salt or baking soda
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Sesame seeds
  • 8 leaves Curry leaves
  • 2 tablespoons Fresh cilantro (coriander), chopped
  • 2 tablespoons Grated coconut (optional)

Directions

Step 1

In a mixing bowl, combine chickpea flour, rice flour, yogurt, and water. Mix until you get a smooth batter without lumps.

Step 2

Add ginger paste, green chili paste, turmeric powder, salt, sugar, and lemon juice to the batter. Mix well and let it rest for 10 minutes.

Step 3

Prepare a steamer by bringing water to a boil and lightly greasing a dhokla tray or dish.

Step 4

Just before steaming, add Eno fruit salt or baking soda to the batter and gently mix it in. The batter will become light and frothy.

Step 5

Pour the batter into the greased tray and place it in the steamer. Cover and steam for 15-20 minutes on medium heat, or until a toothpick inserted into the dhokla comes out clean.

Once done, remove the tray from the steamer and let it cool slightly before cutting into square or diamond-shaped pieces.

For tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Then add sesame seeds and curry leaves, and sauté for 30 seconds.

Pour the tempering over the steamed dhokla pieces evenly.

Step 9

Garnish with chopped cilantro and grated coconut (if using).

Serve warm with green chutney or sweet tamarind chutney.
