Ingredients

  • 200 grams fresh spinach leaves
  • 100 grams gluten-free breadcrumbs
  • 2 tablespoons gluten-free all-purpose flour
  • 2 large eggs
  • 1 medium onion, finely diced
  • 2 cloves garlic cloves, minced
  • 50 grams parmesan cheese, grated
  • 3 tablespoons olive oil (for frying)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon ground nutmeg

Directions

Step 1

Rinse the fresh spinach leaves thoroughly and blanch them in boiling water for 1-2 minutes until wilted.

Drain the spinach and allow it to cool. Once cool, squeeze out as much excess water as possible and finely chop the spinach.
