Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 cup Warm water
  • 0.5 cup Milk
  • 2 tablespoons Olive oil
  • 2 tablespoons Sugar
  • 1 tablespoon Instant yeast
  • 1 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 2 tablespoons Butter
  • 1 tablespoon Butter

Directions

Step 1

In a large mixing bowl, combine the warm water, milk, sugar, and yeast. Stir until the yeast and sugar are dissolved, then let it sit for about 10 minutes, or until the mixture becomes frothy.

Step 2

In a separate bowl, mix together the gluten-free all-purpose flour, salt, and baking powder.

Step 3

Gradually add the dry ingredients to the wet ingredients, stirring continuously to avoid lumps. Once the flour is fully incorporated, add in the olive oil and 2 tablespoons of butter, mixing until you have a smooth dough.

Step 4

Cover the mixing bowl with a damp cloth and leave the dough to rise in a warm place for about 45 minutes, or until it has roughly doubled in size.

Step 5

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Step 6

Lightly flour a clean surface and, using your hands, gently knead the dough for about 2 minutes, adding more flour if necessary to prevent sticking.

Step 7

Divide the dough into 8 equal portions and shape each piece into a small patty or disc, about 1/2 inch thick.

Step 8

Place the shaped pieces onto a baking tray lined with parchment paper.

Step 9

Melt the remaining tablespoon of butter and brush it over the tops of the sochen for a golden finish.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the sochen are golden brown and sound hollow when tapped on the bottom.

Step 11

Remove the sochen from the oven and let them cool on a wire rack for a few minutes before serving.

Step 12

Serve warm and enjoy your gluten-free sochen with your favorite spreads or dips.
